Animal Farm by George Orwell (sheep & hens)?

I know that the sheep represent the workingcl of russia and the hens represent the kulaks. However i have to do an oral presentation on the importance of theese two groups in the novel and in the russian revolution could anybody please give me some more detail about their importance in the story?
